Triple Berry Summer Crumble

Low Carb Berry Crumble

A summertime delight!

Ingredients:

  • 1 1/2 cup almond flour
  • 1/2 cup pecans chopped
  • 1/4 tsp salt 
  • 3/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/3 cup swerve brown sugar
  • 3/4 cup butter frozen
  • 1 1/2 tsp vanilla
  • 1 tsp apple cider vinegar
  • 2 egg yolks
  • 2 lbs of mixed frozen blueberries, raspberries and strawberries (or whatever low carb fruit you like)
  • 1 ½ tsp xanthan gum
  • 1/4 cup swerve or other erythritol sweetener
  • Zest from 1 lemon
  • Juice from 1/2 lemon
  • 1/4 tsp ground nutmeg

Directions:

  1. Freeze the butter and defrost the berries (I always forget to do this before I start). Preheat oven to 375 °F.
  2. In a large bowl add almond flour, chopped pecans, salt, baking powder, cinnamon and Swerve brown sugar. Stir together with a fork.
  3. Take the butter out of the freezer and place a hand grater over the bowl of dry ingredients. Grate the frozen butter into the bowl, stopping and stirring in to the dry ingredients periodically. Repeat until all butter is mixed in.
  4. Add vanilla and vinegar and egg yolks to the bowl and stir together until well combined and set aside.
  5. In another large bowl, combine the berries, xanthan gum, swerve, lemon zest, nutmeg and lemon juice. Stir together well with a spoon.
  6. Divide the crumb mixture in half and press half of it in bottom of a pie plate. Pat in and gently spread over bottom of pie plates with your hands. Bake in the pre heated oven for 8-10 minutes.
  7. Remove the crust from the oven and add the berry mixture on top of the bottom crust. Then take the remaining half of the crumb mixture and use your hands to place the dollop over the top of the blueberries. The topping will be lumpy and uneven. Just drop it over the berries in small uneven clumps, it doesn’t have to be prefect. If you have some crumb dough left over, that can be frozen or you can use it all for extra crumbly goodness.
  8. Bake in oven at 375 degrees for 15-20 minutes or until fruit is warm in the center and the topping is crisp and well browned.
  9. Cool slightly and serve warm with whipped cream or Nick’s Swedish Vanilj ice cream (Heck Ja!).

1 slice has roughly 142 calories, 12g carbs, 10g fat and 4g protein. This is an estimate and based off my entry of the ingredients into My Fitness Pal.
